Lunch Breaks


When talking to my girlfriends, they told me that it is not always easy to come up with ideas for interesting and healthy food to take to the office or just to eat at home when you are working. I read about these pot noodles in some of my cook books (Jamie Oliver as well as Hemsley&Hemsley) and I thought it would be a good idea to get some inspiration there.
Basically all you need is a mason jar, some noodles, some veggies, some flavouring and when lunch time comes just some boiling water. That's easy, no? 5 minutes prep in the morning and you are good to go. Add some strawberries for dessert and some flavoured water to hydrate, go out to get some air and you will feel brand new and ready to attack the rest of the day.

The Base
Cooked Quinoa, cooked lentils, cooked beans, noodles, cooked shredded roast chicken, hard boiled egg
The Flavors
Salt, soya sauce, chili flakes, fresh chili, ginger, garlic, red onion, spring onion, curry powder, five spice, coconut milk, coconut oil, toasted sesame oil, chicken stock cube
The Veggies
Grated or spiralized carrot, zucchini, bok choy, spinash, kale, shredded cabbage, bell pepper, radishes, snap peas, cooked or raw broccoli, roasted tomatoes, cooked caulifower, soy beans, kale, cooked grean beans
OR
If you want to make it even easier on yourself, buy some pre-packed wok veggies, some wok noodles (that you don't have to cook), add a stock cube, some curry powder, some chili flakes, some soy sauce, add boiling water, wait a few minutes and eat!
That's what I did in the pictures below and it was tasty, hearty and filling.
