Good Morning! Let's start the day!

Hello, I'm back with lots of inspiration and plans!
A good day starts with a good breakfast, they say. To be honest, other than hotel breakfasts and brunch breakfasts on weekends, I have not had a decent (weekday) breakfast in years.
But this is going to change today, together with starting my new life!
I thought this granola recipe would be good starting point.
So here we go! You will need:
225gr rolled oats
90gr pecans
2 ml vanilla powder
100ml sunflower oil
2 table spoons liquid honey
70gr dried cranberries of blueberries (if you can find them)
100-150gr of white chocolate
2 tablespoons pumpkin seeds

Preheat the oven to 175 degrees Celsius. Mix rolled oats, vanilla powder and pecans in a large bowl. By hand, whisk the sunflower oil into the liquid honey to a smooth mixture and drizzle it over the rolled oats. Stir until it's well blended. Cover a baking sheet with parchment paper and pour the rolled oats mixture in the baking sheet. Roast in the oven for about 18-20 minutes, stirring halfway through, and then let cool completely in room temperature.
Grate the white chocolate on the coarse side of the grater. Sprinkle it on a baking sheet covered with parchment paper and roast the chocolate in the middle of the oven at 175 degrees Celsius for about 6-7 minutes or until the chocolate gets light golden brown. Watch it - it burns very fast! Remove the baking sheet from the oven and let cool in room temperature. Break the roasted chocolate into smaller pieces.
Fold all of the cooled ingredients together, add dried blueberries and pumpkin seeds and pour into a glass jar. Store the granola in a dry and cool place. You cannot keep them for very long, due to the chocolate, but on the other hand they are so good that they won't last very long anyway.

Drink.Stay.Dine. at Copenhagen

This weekend we went to Copenhagen en amoureux. That means without the baby. For the first time. To celebrate our 3 year anniversary.
We missed our little girl. Especially because in Copenhagen you see 2 strollers for every adult and it is such a family minded city,  but we enjoyed our time together, just the two of us.
And of course we had good food!
Here our hotel, food & drink  report on our 3 days in Copenhagen:
We stayed at the Axel Guldsmeden Hotel, very cosy and eco-friendly.

On arrival we had lunch at the Foodmarket at a Smorrebrod place.

After a good walk we had coffee at The Coffee Collective, a roastery that strives to develop a sustainable production and improve the quality of the coffee.

We had dinner at 'Oliver and the black circus', a very good restaurant with original food with a heavenly taste, service very laid back & friendly. I highly recommend it.

They had a very, very good cocktail (read: tipsy Lisa) with Lime wodka, passion fruit, ginger and a lemon leaf.

Day 2 we had breakfast at Granola, I had the breakfast plate with a pancake, cinnamon toast and home made hazelnut paste.
After a 30 minute train ride we visisted the Louisiana Museum at the sea side and had some more Smorrebrod lunch in the sun with sea view.
When we got back we had some Danish beer on a terrace at Nyhavn.
In the evening we had dinner at Radio, which again had a very interesting menu, very vegetable orientated and intense flavours, but the overall experience could not match our dinner at the previous restaurant 'Oliver and the black circus'

After dinner we went for drinks in the meat packing district at Karriere, a bar with a cool atmosphere, good music and well shaken drinks! We had Raspberry Punches.

This morning we went for breakfast at Toby's Café at the Island Brygge after sleeping inn quite late, okay Danish breakfast but service not very friendly, but good cappuccino.
That rounds up our culinary tour in the capital of Denmark.
