A good day starts with a good breakfast, they say. To be honest, other than hotel breakfasts and brunch breakfasts on weekends, I have not had a decent (weekday) breakfast in years.
But this is going to change today, together with starting my new life!
I thought this granola recipe would be good starting point.
So here we go! You will need:
225gr rolled oats
90gr pecans
2 ml vanilla powder
100ml sunflower oil
2 table spoons liquid honey
70gr dried cranberries of blueberries (if you can find them)
100-150gr of white chocolate
2 tablespoons pumpkin seeds

Preheat the oven to 175 degrees Celsius. Mix rolled oats, vanilla powder and pecans in a large bowl. By hand, whisk the sunflower oil into the liquid honey to a smooth mixture and drizzle it over the rolled oats. Stir until it's well blended. Cover a baking sheet with parchment paper and pour the rolled oats mixture in the baking sheet. Roast in the oven for about 18-20 minutes, stirring halfway through, and then let cool completely in room temperature.
Grate the white chocolate on the coarse side of the grater. Sprinkle it on a baking sheet covered with parchment paper and roast the chocolate in the middle of the oven at 175 degrees Celsius for about 6-7 minutes or until the chocolate gets light golden brown. Watch it - it burns very fast! Remove the baking sheet from the oven and let cool in room temperature. Break the roasted chocolate into smaller pieces. 
 Fold all of the cooled ingredients together, add dried blueberries and pumpkin seeds and pour into a glass jar. Store the granola in a dry and cool place. You cannot keep them for very long, due to the chocolate, but on the other hand they are so good that they won't last very long anyway.
