Asian Flavours

Sometimes (often) I long to go back to Asia. Somehow it captures you and it is not easy to let go.
I cannot wait to go again and take my hubbie and the little lady with me.
Luckily with all the good Asian products we can get here, it is possible to recreate some of the flavours and fragrances, that make you dream away, back to this little piece of heaven.
I am very into Asian flavours at the moment. Yesterday I picked up a new Vietnamese cooking book, and today I already tried y a recipe. It was very yummie.
Stuffed Squid with Pork (serves 4 small eaters or 2 big eaters)
Very easy, very tasty
You will need:
handful of Cilantro
Juice of 1 lime
handful of cooked glass noodles
2 tablespoons of  Nuoc Mam (Vietnamese fish sauce)
2 cloves of garlic
1 shallot
Pinch of sugar
200 gr of pork mince
pepper & salt, go easy on the salt

Mix all of the above together and stuff the squid
Bake in a wok with 2 table spoons of vegetable oil for 10 minutes until golden
Add 150 ml chicken stock, cover and let simmer for 10 more minutes
Turn of the heat, leave covered and let it rest for 5 more minutes
Serve with Jasmin rice

While I waited for the squid to cook, I made a healthy lemonade with lime, lemon, ginger, mint, some palm sugar and some ginger flavoured tonic water. So delicious!


 There you have it. You should try it.

A few weeks ago, we went for lunch in Antwerp at Camino! A small Asian inspired eatery with the best pork belly sandwiches (Asian Style) and their noodle salad dressing was sooooo good. Pork belly and Asian flavours make this girl happy!
